Pearse Lyons Cooper’s Select Irish Whiskey | 700ML Tasting Notes
Nose: On the nose you can get dried orange, pineapple and lemon peel to start, followed by mellow coffee, chocolate biscuit and a hint of gingerbread.
Palate: The palate has a big dried fruit and oak char palate initially which develops into raisins, juicy citrus, vanilla and red apple.
Finish: Finish of honeyed gingerbread, sweet stewed pineapple, apricot and oak spice.
Distillery Information
In 2012, Pearse’s dream to have a distillery in Ireland began to take place. He and his wife Deirdre discovered St. James’ Church in the Liberties district of Dublin 8. An old and dilapidated church would become the new home to Pearse Lyons Distillery.
